Fully Loaded Creamy Cauliflower - Keto Friendly Mama Julie Style

Do you want to know how to make mashed cauliflower that is thick and creamy? Well I want to show you the best Keto Mashed Cauliflower I have ever had. In the video will show you how to keep your cauliflower mash from getting too thin. I will also show you what to do if you make a mistake and get your keto cauliflower mash too thin. I hope this recipe helps you take the blah out of your eating routine and help you stay on your healthy eating plan by finding recipes that satisfy you!


Recipe:

32 oz. Cauliflower Florets (I don't recommend frozen for this recipe it has too much water already absorbed. )

1/3 cup chopped green onions + more for garnish

1/3 - 1/2 cup shredded cheddar cheese + more for garnish

4-6 slices cooked bacon + more for garnish

4-8 oz. cream cheese

1/4 - 1/2 cup cream (If your creamed cauliflower is thick enough and can handle more liquid.)

1/2 tub or little cup of Knorr Homestyle Stock Chicken Flavor

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. Lawry's garlic salt (Yes I use both garlic powder and garlic salt.)

fresh ground black pepper to taste

Get a large pot of boiling water (I like to add a little salt to my water it adds flavor to the veggies.) and bring to a simmer. Blanch your cauliflower until al dente meaning they still have a little bit ( a little crunch in the middle ) of firm area that is still not totally cooked in the middle of the vegetable. As the cauliflower drains it will continue to cook. Usually when blanching vegetables, you will immediately shock them in a bowl of cold water, but with cauliflower that soaks up and retains water you don't want to do this. Allow them to drain as long as possible so the as much of the cooking water as possible can be removed.

Once drained, use your food processor to puree the cauliflower. Add in your cream cheese, your Knorr chicken homestyle stock, cream if possible, onion powder, garlic powder, Lawry's garlic salt and fresh black pepper to taste. Once again use the processor to puree or cream everything. Once it’s the consistency you like remove from food processor and add in your green onions, cheese and bacon ( if using ) and combine.

This can easily be made ahead of time and reheated. Garnish as you choose.



If you thin it out too much, no problem just turn it into soup. The video will show you how.
