MAMA JULIE’S CREAMY & FROTHY LEMONADE – KETO FRIENDLY
BASIC RECIPE ( for one lemonade )
1 – can of lemon lime soda ( I use Zevia brand or diet soda if your keto )
1 lemon wedge
1-3 Tbsp. of heavy whipping cream ( depending on your taste preference )
½ dropper full of Sweetleaf vanilla stevia droops. ( if you don’t have that you can add in approx. ¼ tsp. vanilla extract )
Fill your glass with ice. Pour in the lemon lime soda. Squeeze in the juice of 1 lemon wedge, or more if you like. Add in your vanilla stevia drops and a splash of cream.
Note: This basic recipe is really good all by itself. It reminds me of lemon bars, especially with the vanilla in it. If you want too you can drink your lemonade just like this or continue on to make the topper.
WHIPPED TOPPING: ( this will make many lemonades during the week )
2 Cups of cold heavy whipping cream
1/3 cup sweetener - I use Lakanto Monkfruit because I am on keto but if you’re not
concerned with carbs that use whatever sweetener you like.
1 Tbsp. dry milk powder – this stabilizes your whipped cream topping so you can keep it in the refrigerator for days without it going flat.
½ tsp. Cake Batter Extract – You can play with the amount of cake batter extract to see exactly how much you like.
SweetLeaf Vanilla Stevia Drops – 2-4 half droppers full - if you don’t have this ingredient you can add in plain vanilla ( approx. 1 tsp. )
Whip all the ingredients together until they form stiff peaks. I like to put a huge dollop of this on top of my lemonade base and stir it in partially. Its really good with some of the whipped topping mixed in and some still on top !!!
